Abbruzzesi Red Sauce Recipe

ingredients

Veggies

  • 2 yellow or white onions
  • 4 Stalks of celery
  • 2 cloves - 1 whole head of garlic, to preference
  • 1 #10 can of tomato sauce

Meat

  • 2-5 italian sausages, cut into medallions
  • half rack of Country-Style Ribs, bone-in

and/or

  • beef spare ribs
  • meat balls

spices and oils

  • salt
  • pepper
  • oregano
  • red pepper flakes
  • 1/2 cup Olive Oil

Equipment:

  • blender or food processor
  • sauce pan
  • large chopping knife
  • frying pan
  • serving spoon

steps

  1. Prepare the meat:
    • heat a large frying pan or skillet to high heat.
    • cut, season, and sear all the meat(can be done one night before).
    • after you're done browning the meat, deglase the pan with white whine or a light vinegar - retain the fond.
  2. prepare the veggies
    • blend or process the onions, garlic, celery, half a cup of Olive Oil into a puree, add to a large saucepan.
    • allow the mixture to slowly heat up until it starts to smell and steam.
  3. Add the meat to the pot with all the juices
  4. add the can of tomatoes, rince the sides with water, and add that as well.
  5. simmer all day, being careful not to let the bottom burn.

Serving

  • serve over choice of pasta with crusty italian bread and pecorino grated cheese.

notes

  • you can add carrots, but I think it makes it too sweet.
